At least 50 months from November 1 of the year of the harvest, including at least 9 months in oak barrels.

Perfect with flavorful and spicy meat or liver terrines, roasted or stewed lamb, duck or goose meat with sweet and sour sauces, wild poultry, and spicy beef dishes with wine sauce.
